ROLL IN PROOFER

The controlled fermentation cabinet for FC-SK and FC-SR racks apply all the quality and technical solutions of the IVERPAN range. It is a convenient cabinet which is highly suited to controlled fermentation in small bakeries which base their production on the use of racks. Equipped with SALVA's most advanced fermentation control software, providing small artisan bakers with a range of possibilities previously only available to large chambers

Equipment designed to proof the dough after dividing. The stresses suffered by the doughs in the dividing stage require the dough to proof before it is worked on, in order to ensure an optimal end result. There are two types of intermediate proofer: static and dynamic.

Controlled fermentation chamber. FC Range

SALVA's FC range of controlled fermentation chambers are cabinets fitted with a cold unit, electric heating elements and a humidity producer, which can be used for direct fermentation, controlled fermentation and delayed fermentation. They have an air-conditioned space made up of one or more cubicles to introduce storage or baking racks, allowing precise programming of the fermentation of bread and cake doughs.

A gentle air flow inside the cabinet generates a type of high-quality, humid cold.
